Moms Favorite Dinner Biafrin Stew
Today is my moms favorite recipe and since it would have been her birthday I will share this recipe with you again.
Biafrin stew is a traditional Nigerian recipe from the region known as Biafra. This was not the first or last African recipe that I made for my family but this meal became my moms favorite . African cooking because a staple in my dinners I prepared for my family thanks to Jeff Smith the PBS cook.

This is the recipe I made and I am going to share it the way Jeff Smith made it and I make it today:

Biafrin Stew
Ingredients
1 1/2 lbs chuck steak, cubed ( I use any steak that is on sale)
2 1/2 lbs chicken pieces ( I use boneless)
1 28-oz can whole tomatoes
1 green pepper, coarsely chopped
1 yellow onion, chopped
1 tsp. Tabasco sauce/ 8 drops of Franks Red Hot (I use Franks)
Salt and pepper to taste
Peanut oil for frying
Instructions
Heat the oil in a large pot. Brown the beef. Add the remaining ingredients, mix, cover and simmer for 1 to 1 1/2 hours or until cooked.
I never saw Jeff Smith brown the beef for this meal. In fact he made a point that all he did was stack the ingredients and let it cook for 1 to 1 1/2 hours or until cooked.
I have always served this over Rice but if you like Couscous that is the traditional way the serve it. I don't like Couscous that's why I changed that part of the recipe.

So unless I am feeling ambitious I do the same thing.
I will be posting more of the African dinners I have made over the years and still make today for everyone to try and enjoy.
But for now give this a try I think you will find a new favorite meal as my family did.
