MATZOH BREI
The last couple of days
I have been looking for a different kind of egg dish. I was not certain what I
wanted to make but knew I would know the right recipe when I found it.
Today that is just what
happened. I found several easy Passover recipes and this is the one that
appealed to me the most.
It fit the criteria of
being easy and fast to make, of course be affordable, and that I have the ingredients
on hand. Bingo! I did have all the ingredients and decided that and this was what I was going to make for brunch.
MATZOH BREI
INGREDIENTS:
8 to 10 matzohs
2 eggs
¼ cup sour cream
¼ tsp garlic powder
1/2 Tbsp minced green onion or chives
3 Tbsp of butter, divided
Sour cream, apple sauce, or maple syrup, to taste

DIRECTIONS:
1. Break matzohs
into small pieces in a large bowl. Fill bowl with water and then immediately
drain. Matzohs should be barely dampened.
2. Beat eggs, sour cream, and garlic powder together. Add minced green onion or chives. Stir this mixture gently into the matzohs, coating the broken crackers.
3. Melt 4 Tbsps of butter in a large skillet over medium heat. Empty the matzohs into the skillet and spread evenly. Dot the tops with 2 Tbsp butter. When the bottom of the pile begins to brown, flip them over. They will break into ragged pieces. Continue cooking, stirring, and flipping until all pieces are cooked through, but not burned.
4. Remove from heat and enjoy with extra sour cream, apple sauce, or even maple syrup.
