West African Peanut and Chicken Stew

Today I decided to see what in the pantry needed to be used up.
I found three jars of peanut butter. One was smooth and I don’t eat smooth but then that gave me an idea.
Why not makfe African Peanut and Chicken  stew?
African food is my second favorite food to make I could tell you it is because my great grandfather was from South Africa and that’s true and we do have that African heritage, but I make it because I learned to make by watching the Frugal Gourmet on PBS. This was his specialty and it did become mine.
This is a wonderful stew to make when the weather is cold and you need a satisfying meal to warm the soul.
Here is the recipe.

West African Peanut and Chicken Stew

Ingredients:

2 Perdue cooked boneless, skinless chicken breasts..
8 oz. peanut butter
1 c. Chicken broth
16 oz. can tomato puree (You can also use crushed tomatoes)
2 tbsp. brown sugar
*** This is also good with sweet potatoes, celery, and onions. 

Directions:

Mix ingredients 2 to 6 together in pan. Cook for 5 minutes. Mix in chicken. Cook until heated through.
Serve over rice or boiled potatoes.
A good side would be a green vegetable.

As you see this is quick and easy, Not to mention very enjoyable.
Give it a try you just might find this will become a favorite.
