Cordon Bleu Style Stuffed Chicken Breast My Way!
I knew I had a boneless chicken breast defrosted in the refrigerator and I could have just put it in the George Foreman but I wanted more but what ever I made had to quick and easy.
That is when an idea came to me. I would make my version of Cordon Bleu but do this stuffed chicken breast my wayusing much of the same ingredients . This is a French term Cordon Bleu literally translated means "blue ribbon". This was not going to go to that level but why not make a stuffed chicken breast my way?
I took out the stainless mallet a friend had given me for Christmas and pounded the chicken breast until it was double it size.
Next I took out the left over ham slices from Sundays dinner (and you though you could not enjoy left overs!) I put the ham slices on the chicken and then topped it with some grated cheese I had in the refrigerator. Next I rolled up the chicken and sealed it with toothpicks and put the chicken in the oven at 350 for twenty five minutes using convection
I then reheated some left over mashed potatoes and sat down to enjoy an upscale and filling dinner. The whole thing including cleanup only took thirty minutes! So that was fast enough for a sore, tired, yard worker to have an enjoyable meal.

Cordon Bleu Style Stuffed Chicken Breast My Way!
Ingredients:
1 boneless chicken breast
left over ham piece
shredded cheese
Directions:
1. I took out the stainless mallet and pounded the chicken breast until it was double it size.
2. Put the ham slices on the chicken
3. top with some grated cheese
4. Rolled up the chicken and sealed it with toothpicks
Put the chicken in the oven at 350 for twenty five minutes using a convection oven or five minutes longer with regular oven.
Cordon Blue is usually breaded. I seldom bread anything but its easy if you want to do it.
It is also serve with a white wine sauce. Again easy to make. I was too tired to bother.
Here is how you do it if your interested:
Make a rue butter and flour
stir until the flour a golden though removing the flour taste.
Add some chicken stock and finally some white wine.
Thats all it takes to make a white wine sauce.
Which ever you way you choose to make this meal give it a try. Its easy and fast not to mention enjoyable and tastes so good!
