Baked Veggie Casserole

The other day I decided I wanted a vegetarian dinner and I found this in one of my emails. I of course had to re do the recipe to fit the needs of one person then made and enjoyed this dinner. I think you will too. It is so easy to make and is full of flavor!
Here is the recipe:

Baked Veggie Casserole



Ingredients:

1/8 cup vegetable oil
1/2 onion, chopped
½ tsp. minced garlic
1/2 large green bell pepper, finely chopped
1  medium tomatoes, diced
Salt and pepper to taste
Ground cumin to taste
1 small can lima beans, drained
1/8 cup chopped fresh parsley
2  eggs
1 tbsp. butter, cut into pieces

Directions:

1.    Preheat oven to 400 degrees.
2.   Heat oil in a large skillet over medium heat.
3.    Stir in onion, and cook 5 minutes, until tender. Stir in garlic, green bell pepper, and tomatoes and then season with salt, pepper and cumin. Reduce heat
4.   Simmer 15 to 20 minutes.
5.   Mix beans into the onion mixture. Stirring occasionally, cook 10 minutes.
6.   Toss in parsley, and transfer to a medium baking dish.
7.   Break eggs over the top, dot with butter, and season with salt and pepper.
8.  Bake 15 to 20 minutes in the preheated oven, until the eggs are cooked through.

I made this but I did not have Lima beans so I used French style green beans and it worked great. So if you don't have or you don't like Lima beans use what you have. Once again think outside the box and make it your way
Also if you really want that taste of meat in this casserole add some bacon bits. It is a good way to get the taste with out weighing down the value of this meal with meat.
This is so easy to make and is so good!
