Chopped Mexican Salad
Today is Friday and it’s going to be a hot day.
That means a good dinner that works with this kind of weather.
What I decided to make was dictated not only by the weather but also by what I had on hand.
Last night my neighbor brought over a half a head of lettuce, a tomato, and half of a cucumber.
I had told her yesterday I was going to Gabriel’s market today and get some lettuce.
She had made a salad for dinner and decided to give me the remaining salad ingredients so they would not go to waste. Plus the day before I had grilled two hamburgers and used only one.
I also had a half a package of taco seasoning from a meal I made last week.
So I decided this is what I was going to make:
Chopped Mexican Salad
Ingredients:
½ head of lettuce
½ cucumber
½ tomato
handful of shredded Mexican cheese
¼ pound of hamburger
½ package of taco seasonings
Small can tomatoes and green chilies
Dressing
Instructions:
Brown hamburger and add the can of tomatoes, taco seasoning, and chopped onion.
Chop lettuce, tomato, and cumber so that you get a chopped salad.
Place cooked ingredients on top of salad and and chopped cheese then serve with a creamy dressing on the side.
Add what ever you want to this salad its up to you but it will be a great meal for a hot day like this!
