Cinco de Mayo Margarita Marinated Grilled Steak
Cinco de Mayo what is and what does it stand for?
Like most people I had heard what it was supposed to represent but I
decided to make sure and share it with you.
Cinco de Mayo ( Spanish for "fifth of May") is a celebration
held on May 5. It is celebrated in the United States and regionally in Mexico.
It originated with
Mexican-American communities in the American West as a way to commemorate the
cause of freedom and democracy during the first years of the American Civil
War, and today the date is observed in the United States as a celebration of
Mexican heritage and pride.
That of course is an abbreviated definition and more information is
available on line.
Now that we know why we celebrate the fifth of may lets make a dinner
that will celebrate the day.
I chose to make
Margarita Marinated Grilled Steak
Ingredients
1 lb club steak, or sirloin
the juice of 2 limes
the juice of 1 orange
1/2 cup tequila
1 teaspoon freshly cracked black pepper
1/2 teaspoon or more to taste chile powder
2 cloves garlic, grated
1/2 teaspoon ground coriander
Directions
1. Add all ingredients, except steak to a shallow baking dish or zip-lock
bag for marinating. Mix well, then add steaks. Let marinate for 2 – 3 hours.
3. Preheat grill to high. Brush with oil. Sear steak, cooking medium
rare for skirt steak, and medium rare or medium for sirloin.
3. Slice against the grain and serve with rice or salad.
Simple and good! Who doesn’t like, steak ? Add tequila and how can you
miss?
