Creamy Cherry Cobbler
with Pound Cake Topper
Tomorrow is memorial day and we have all the ingredients for a great
grill out. Now all we need is desert on the grill of course!
I came across this recipe and its perfect! It has a lot of the ingredients
I love plus everything on it is on sale this week now how can you beat that?
Here’s the recipe to complete the perfect cook out for your friends!
Creamy Cherry Cobbler
with Pound Cake Topper
Ingredients:
1/4 cup granulated sugar
1 tablespoon cornstarch
3 cups fresh or frozen unsweetened pitted tart red
cherries
Cap full of almond extract (use vanilla if you don’t have
almond)
4 ounce package cream
cheese, softened
1 tablespoon packed brown sugar
1/2 tablespoon lemon juice
¼ loaf frozen pound
cake, thawed and coarsely crumbled
1 tablespoon butter, melted
Directions:
1.
In a large saucepan
combine granulated sugar and cornstarch; stir in cherries. Cook and stir over
medium heat until thickened and bubbly.
2.
Remove from heat and
stir in almond extract.
3.
In a small bowl beat together cream cheese,
brown sugar, and lemon juice with an electric mixer on low to medium speed
until smooth.
4.
Spoon about half of the
fruit mixture into a 2-quart disposable foil pan.
5.
Dollop cream cheese
mixture over fruit mixture in the foil pan.
6.
Spoon remaining fruit mixture over the cream
cheese mixture. Cover pan tightly with foil.
7.
Test for medium heat
over center of grill.
8. Place foil pan on
rack in the center of grill.
9.
Cover; grill for 15
minutes.
10.
Uncover pan. Sprinkle
top of fruit mixture with cake pieces and drizzle with butter.
11.Keep pan
uncovered. Cover grill; grill for 10 minutes more.
12.
Cool on wire rack for 30
minutes.
13.
Serve warm.

The pound cake is a
regular item at the Dollar Tree as well and I can tell you it’s the best commercial
pound cake I have ever had!
They usually have three
different pound cakes and one of them is usually almond. I would get this one
or plain it’s up to you.
This is perfect to make
while everyone is eating the main course and will be warm and rich when
everyone is ready for desert!
