Chili Over Hot-dogs With A Side Of Cilantro Lime Brown Rice

 Today’s dinner is not that creative it is based on a craving. But then again whets more fulfilling than satisfying a craving?
Today as I was reading my book I decide to make Chili.
I hoped I had everything I needed and I did.
I use Virgo Chili Mix. It cannot be beat and it is quick and easy.
I decided to change up what I was going to add to the mix this time because tomorrow or Friday I will make a Mexican Taco salad.
So instead of the tomatoes I added chopped tomatoes with green chilies and a quarter package of taco mix.
While that was cooking I had to decide if I was going to make corn bread. No its summer time I wanted something a little lighter.
That is when I decided to make brown rice with lime. 
Here is how I made it:



Cilantro Lime Brown Rice

Ingredients:

1       cup instant  brown rice,
1 cup of water
1 tablespoon of butter
Salt and pepper to taste
    ½ lime
Handful of fresh cilantro

Directions:

Cook according to package directions in the microwave adding the juice of ½ lime and lime zest.
Also add the cilantro, butter, and seasonings.

I am also growing cilantro to it is available on my porch. Also there is Mexican Tarragon and parsley and I added some of that as well.
When the rice was done I added just about a teaspoon of brown sugar. I just needed to cut the tart taste of the lime a little.
It tasted really good.

When the chili was done I served over two hot dogs with the rice as a side.


I though it turned out great and hope you give it a try and enjoy it as I did!
