Fathers Day Breakfast: Bacon Chedder Pancake Bites and Mimosa's
Father’s day is coming and you wanted to give dad a wonderful gift but the economy being what it is
that is just not possible this year.
You got him a nice but conservative
gift, but you feel he deserves more so what to do.
How about starting out
the day for dad with a delicious meal that he will love?
Here is my suggestion:
INGREDIENTS:
Pancake Bites
1 cup Original Bisquick®
mix
½ cup milk
1/4 maple syrup
1 egg
4 bacon slices, crisply
cooked, crumbled
¼ cup shredded Cheddar
cheese (1 oz)
Toppings
Additional real maple
syrup w/bacon bits
Powdered sugar
1 Heat oven to 350°F.
Lightly spray 16 to 18
mini muffin cups with cooking spray.
2 in large bowl stir
together Bisquick ® mix, milk, maple syrup and egg.
3 Add bacon and cheese;
stir just until combined. A few lumps may remain.
4 Pour batter evenly
into mini muffin cups, filling nearly to the top of each cup.
5 Bake 10 to 15 minutes
or until tops are light golden brown and spring back when lightly touched. Cool
in pan 5 minutes. Remove from muffin cups to serving plates.
6 While the pancake bite
are baking heat the syrup and add some bacon bits to the syrup.
Serve pancake bites warm
or at room temperature drizzled with warm maple syrup that has bacon bits in it
or sprinkled with powdered sugar

Let’s make Mimosa’s!
This is easy to make and
don’t worry not expensive. If Champagne is not in your budget get an inexpensive
bottle of sparkling wine. That can cost as little as two dollars.
Mimosa
Ingredients:

Sparkling
Wine, or Champagne (1 bottle)
·
Orange
Juice (1 carton)
·
Triple
Sec (optional)
Instructions:
1 Fill
half of a champagne flute with chilled sparkling wine or Champagne (about an
ounce)
2 top
off with chilled orange juice (again about 2 ounces), gently stir.
3 If
you'd like to add triple sec, just a splash to taste works out fine.
4 For
added flare slice up a strawberry to decorate the rim of each flute.
Now you’re
ready to serve breakfast to dad and the family.
Make
sure you cook up the whole pound of bacon so that later you can put away some
bacon with left over pancake bites for another day in your freezer.
I
believe dad will be happy with this breakfast and you will be happy that you
gave dad a special treat on his special day.
All that is left to do
then is enjoy and only you will know how easy and affordable this was to make!
