Green Salad with/Sliced Chicken & Watermelon!
Today is the first day
of summer and the weather for a change is cooperating.
The perfect thing to do
of course is to cook out on the grill.
I decided to make a
green salad topped with honey/butter chicken breast.
This was always my mother’s
favorite first day of summer meal.
This is easy to make of course.
Here is what I will do:
Green Salad with/Sliced Chicken & Watermelon!
Ingredients:
2 tablespoons Honey
2 tablespoons Butter
1 chicken breast
Directions:
1.
Marinate one boneless, skinless chicken breast
in butter and honey mixture that you have melted in the microwave for thirty
seconds to make it more liquid.

Let marinate for about
an hour
3.
Grill until chicken in no
longer pink inside.
While the chicken is
grilling make your salad.
I use lettuce, onions,
chick peas, tomatoes and whatever other greens I have on hand that hits my
taste buds that will work for my dinner.
Next I toss the salad
with Italian seasonings, Garlic Powder or Salt, sea salt, and pepper.
The seasoning is enough
so that you don’t have to add salad dressing.
If you still want the
dressing then serve it on the side so you can control the amount that you will
be using.
When the chicken is done
and has cooled for about twenty minutes I top the greens with slices of the
chicken.
I serve the salad with a
side of corn or grilled squash.
Desert? What else watermelon
of course!
