Scalloped Potatoes With Ham & Cheese From Leftovers



The last couple of days has been about using up leftovers and other things in the refrigerator that needed to be used before they went bad.
Yesterday I made lazy day lasagna. I had two small Italian sausages from the day before and some ravioli that needed to be used I had in the freezer. The only other thing I needed was sauce. No problem I had some of my favorite jar sauce that also needed to be used. I had everything I needed to make this dish.
All I had to do was layer the ravioli, then the sauce then the meat and repeat that a couple of times. Then I used some shredded Italian cheese to top it and it was ready to go in the oven.
It turned out great and I will include a picture even though this article is not about that particular dish.


Today I decided to continue cleaning out the refrigerator.
I had milk about to go bad, some Mexican shredded cheese that was starting to get hard and a couple of small pieces of cheese that needed to be used up, as well as half an onion.
Also on the table was the remainder of five pounds of potatoes that also would soon need to be used.
The last potatoes I let go to seed I had to cut away and make potato salad. That was not going to happen again
I did get several plants from the eyes on the potatoes and have some nice green plants growing on the porch.
Anyway I had what I needed to make scalloped potatoes.
As usual I wanted to make this a one dish casserole so I took out a single round of ham I had intended to make a sandwich from this evening.
Now the ham slice was only a quarter inch thick and about three inches round.
Next I had to find a way to get the potatoes sliced as well as the onions.
I looked in my pantry and found a mandolin (that’s a kitchen slicing tool). Perfect! It took no more than ten  minutes to get everything made in the oven and cleaned up!

Here is how I made these potatoes:

Ingredients:
1 ½ potatoes
1 cup of cheese
Wondera flour
tablespoon of flour
½ onion
½ slice ham
Sea Salt and fresh ground pepper to taste.

Instructions:

1.     First make a rue. If you don’t know how its simply melting butter in the pan and graduating adding flour and whisking until blended and the flour is cooked
      Next it’s time to slice the potatoes and onion.
2.   Now change out the blade to a grater blade. I took the slice of ham and grated one half of the ham.
3.   That’s when the mandolin came in handy.
4.    To the pan added the cheese, salt, pepper, potatoes, ham, and onions
5.   Stir and blend together
6.   Once blended pour into a cake pan you have sprayed with a Pam like product and then powdered with flour.
7.   Place in oven at 350 degrees  for 45 minutes.

That’s all you have to do and its ready to eat.
When it time to eat use a little bit of applesauce as a side this and the other half of the slice of ham to complete the meal.

I think the one thing to take from this article is not necessarily the recipe but the idea that we tend to like the same and similar things to eat.
For example I always have onions, raviolis, sauce, and potatoes.
So when its time to use up the foods in the refrigerator that are going to go bad if you don’t use them.
