Caribbean BBQ Ribs





Caribbean BBQ Ribs  & Spicy Sweet Potatoes

Another hot day how lucky can we get? It’s also a good day to make another Caribbean dinner.
My choice are ribs of course.
It is too hot to put a lot of effort into sauces and flavoring so I needed to find something that would cover those bases with as little work as possible.
I did some research and found out that the spices in the Dollar Tree Jamaican Jerk Seasonings were pretty much what was needed for flavoring the ribs I wanted to make on the grill today.
All I needed to do was add a little bit of lime zest.
Perfect! I could handle that.
So I flavored the ribs and put them on the grill.
The ribs I had were very thick so I needed an hour to grill them.
After they were cooked I basted them with some Boss Sauce. For those not from Rochester Boss Sauce is vinegar based BBQ sauce usually associated with chicken but great on everything else you want to BBQ.
I took them off the grill after letting the sauce cook on them for another fifteen minutes.
I did put them away but wanted to taste them first.
I loved the spicy and different flavor of these ribs and the sauce was just the perfect touch.
I cannot wait for dinner tonight!
I think a little broccoli with lime zest will be the perfect side dish with these ribs. If you get ambitious some rice would be nice too.
I believe this will be an enjoyable treat to your pallet and it is to mine.

Here are the ingredients:

Ingredients:

Pork ribs ( I made three so I could make pulled pork for later in the week)
Jamaican Jerk Spice
Lime zest ( I used lime because I had it on hand but any citrus fruit will do)
BBQ Sauce (My choice is Boss Sauce but use the sauce you like)


Caribbean BBQ Ribs



Directions:

1.    Rub the ribs with the seasonings and lime zest
2.   Grill for 35 to 60 minutes depending on the thickness of the ribs.
3.   Check to be sure that the ribs are just slightly pink inside.
4.   Base the ribs with BBQ sauce.
5.   Grill another 15 minutes until the ribs are done.


                                                   Spicy Sweet Potatoes

I will admit I use frozen sweet potatoes that I get a couple times of year. 
I like the Bob Evens sweet potatoes.
That being said this is what I add to make these sweet potatoes.
(This works with canned and fresh only with fresh make sure you add the brown sugar)

Ingredients:

1/2  cup sweet potatoes
1 tablespoon Cilantro 
1 teaspoon lime zest.

Directions:

Combine and heat in the microwave.


That is all there is too it and it will taste as if you have been cooking for hours!
