Chicken
& Caesar Salad Wraps
Another hot day and another day to find
a delicious, quick and satisfying dinner.
It is also another day of using what I
have on hand in the refrigerator that I need to use up.
Today’s inspiration for me is floured
tortillas and Caesar dressing.
So of course off to the internet I went to search for the perfect
dinner using these two ingredients that would make tonight's dinner
quick and easy as well as something I would enjoy.
After looking around and not finding
exactly what I wanted that would be affordable and easy to make I made my own
version of what I found and here is what I came up with:
Chicken & Caesar Salad Wraps
Ingredients:
¼ cup readymade bagged toss salad
¼ cup onion chopped
¼ shredded Italian cheese
1 small tomato
1 hardboiled egg
1 pre cooked chicken patty (such as
banquet) cooked &chopped
Cesar or Italian dressing
1 or 2 flour tortillas, 6 to 8 inches
in diameter
Directions:

Toss salad with the
onions, cheese, and dressings to coat.

Spread mixture evenly down center of
tortilla
.
Top with eggs and tomatoes
.
Heat chicken patty in microwave for a couple of minutes and chop
.
Top the eggs and tomatoes with the chopped chicken
Fold up
one end of the tortilla about 1 inch over filling, fold right and left side
over folded end over lapping then secure with a tooth pick.
Add some fruit like seedless grapes on the side and then dinner is
ready and you’re out of the kitchen!
A couple of suggestions to keep it budget friendly for future
meals.
Banquet makes a large bag of precooked breaded chicken
patties that cost under four dollars. I find a lot of uses for these
patties in my cooking, everything from this wrap, to chicken Parmesan
or just plain chicken sandwiches which I made last night for dinner. When you
find something that is not only inexpensive but is easy to use and has a
variety of uses it is a win, win for you!
Also not many people know this but the tortillas can be purchased
at the dollar store. This really saves on cost and if you keep the tortillas in
the refrigerator after opening and of course well covered they last forever!
The one place I don’t cut corners is on salad dressing. I just
don’t want to take the time to make it so I watch for my favorite kind to go on
sale and stock up on a couple when I can buy them at a good price.

shopping.
