Pasta & Turkey w/ Pesto
Yesterday I was cleaning
out the refrigerator and found several things I needed to use up. You know how I am. If I spent the money to buy it I don't like to waste it.
The evening before I
cleaned out the freezer and discovered some things that also needed to be used
or they would go bad and of course that was not going to happen either.
That is when I decided
to make up a meal using several of these items.
I took pasta from
freezer that was already cooked. The rest of the ingredients from the
refrigerator that included, turkey, green peppers, onions, and chicken broth. Then I decided to add pesto to the mix.
I went out to my
porch and cut some basil I am growing to make the pesto.
I made a quick pesto in
my handy dandy one cup chopper.
I added some oil, nuts,
and garlic to the basil and ground until a sauce quality then added it to the
dinner I was making.
Here is what I came up
with:
Pasta & Turkey w/ Pesto
Ingredients:
1 cup uncooked farfalle
(bow-tie) pasta (6 ounces)
1 cup cubed cooked
turkey breasts
1/4 cup basil pesto
1 /4 cup of chopped
onions
1/4 cup coarsely chopped
green or red bell peppers
1/2 cup of chicken broth
Sliced ripe olives, if
desired
Directions:
1 Cook and drain pasta
2 Mix hot cooked pasta,
turkey, and pesto. Onions, and peppers in same saucepan.
3. Heat over low heat,
stirring constantly, until hot.
4. Garnish with olives.
This turned out great
and I had enough left to make another meal and add some sauce so I am getting
great value for what I made.
