African Coconut Shrimp
One of my favorite South African dishes is Coconut
Shrimp.
Naturally I wanted an affordable and easy recipe and one that would use up more of my supplies and this is what I found:

African Coconut Shrimp
INGREDIENTS
2 eggs
1cup Original Bisquick® mix
1 cup shredded coconut
¼ teaspoon ground ginger
¼ teaspoon ground cardamom
¼ teaspoon salt
1lb uncooked
medium or large shrimp, peeled (with tail shells left on), deveined
1 ½ oil for frying
Here is a recipe for dipping sauce if you don’t
have one or you don’t want to buy sweet and sour or duck sauce.

INGREDIENTS
1/3 cup orange marmalade
1/3 cup apricot preserves
1 tablespoon water
1/2teaspoon soy sauce
