Tortellini Pasta Salad with Tomato, Basil and Mozzarella

                               
Today was so nice and even better no threat of rain.
I decided that dinner was going to be simple and on the grill of course.
I made White Hots and grilled the rolls. These are from Zweigle and are pork.
I love hot dogs especially the ones from Rochester, NY.
Tomorrow is suppose to be nice too so dinner will be a hamburger on the grill of course. I always add salt, pepper, and mustard to my patties. They make the hamburger full of flavor and if you are gentle with the hamburgers when you make your patties and you don’t push down on the meat when you’re cooking it you will end up with a wonderfully , flavorable, hamburger.
But this  beautiful weather can not last long and nope the weather  man tonight said it is going to get hot and humid again with chances of storms next week so it’s time to fine light dinner fare that sounds good and is filing and very easy to make.
This is what I found:


Tortellini Pasta Salad with Tomato, Basil and Mozzarella


INGREDIENTS
·        1/2 lb frozen tortellini
·        1 Tbsp white wine vinegar
·        2 Tbsp fresh lemon juice
·        2 tsp honey
·        ½ cup extra-virgin olive oil
·        2  cups cherry tomatoes, quartered
·        ¼ Lb of Mozzarella chopped  (
·        fresh basil, thinly sliced
·        sea salt and fresh ground pepper, to taste
DIRECTIONS
1.  Bring a large saucepan of salted water to boil. Add the tortellini and cook according to package directions (typically until they float). Drain, rinse, and allow to cool.
2.  To make the vinaigrette, in a small bowl, whisk together the white wine vinegar, lemon juice, and honey. Add the olive oil in a steady stream, whisking as you go.
3.  In a large serving bowl, combine the tortellini, tomatoes, mozzarella, and basil. Drizzle the vinaigrette over the salad and toss lightly to combine. Add salt and pepper, to taste. Refrigerate for up to 24 hours before serving.
This makes three servings. The reason I am making three servings is this is such a good lunch as well as a dinner and will save time and energy when you least want to expend it.
This is an enjoyable meal that is sure to please.
