Corned Beef Hash & Poached Eggs 

What is so creative about corned beef hash and poached eggs? Nothing at all.
This is a meal posted for all of you that tell me you can not be bothered making dinner. If it does not come in a can or out of a freezer you just don't want to bother.
 I try as hard as I can to convince people to limit the salt and preservative laden frozen dinners when ever possible. This is one of those dinners that help you avoid those frozen dinners and is easy to make.
OK here you go. Sometimes something good that does come out of the pantry.
This is also part of my goal of cleaning out my pantry to get ready for the fall and winter weather to come.
I did find a can of corned beef hash and decided that would make a good dinner for tonight.
I like to make the hash in the frying pan to give the edges some crispy quality but all of you who don't want to do that much work then ok make it in the microwave.
Next the  poached eggs.
 I have two eggs left to use up and lets face it nothing is easier than poached eggs.
I just get out a pan boil some water with a drop of vinegar and when it is starting to boil I crack open the eggs and drop the contents of inside the egg shells into the water. A couple minutes later I have poached eggs. What's nice also about poached eggs is the clean up is almost nothing. After all you are just basically cleaning up a pan of water.
I like to complete the meal by making  some toast, but for dinner rolls are good too. Either way I like to top the toast or the rolls with 100 percent natural jam or jelly.
This fall I will make concord grape jam for the year but right now I will use my Smuckers.
There you go dinner is ready and  all you have to do is scoop some has on the plate and top with the poached eggs.
Put the toast or rolls on the side of the dish and your ready eat.
Easy right? 
Sometimes easy and out of the pantry is what we need on a busy day but I never believe in compromising my right to a good and filling dinner and this one is no compromise it's satisfying and tastes so good!
