In Honor of Dr Martin Luther King Sesame
Pecan Chicken Fingers
Today is the
fiftieth anniversary of the famous speech I have a dream made by Dr. Martin
Luther King during the March on Washington.
I did some research
and found out what foods Dr. King enjoyed eating.
I decided to
post this recipe that I believe that Dr King would have enjoyed.
Dr King loved
pecans and chicken and most southern foods.
Here is the
recipe I chose in Dr King’s honor:
SESAME PECAN CHICKEN FINGERS
\
1 pound
skinless, boneless chicken breasts cut into 1-inch
wide strips
1 large egg white
1/2 cup breadcrumbs
½ cup finely chopped pecans
1/8 cup sesame seeds
½ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon curry powder
½ teaspoon sea salt
Cooking Spray
Directions:
1.
Preheat oven to
375'. Line a baking tray with foil and spray with cooking spray.
2.
Beat the egg
whites in a large bowl until frothy; set aside.
3. In a separate
medium bowl, mix together the breadcrumbs, pecans, sesame seeds, paprika,
cayenne and curry powder and salt.
4. Dip the chicken
strips in the egg whites and then roll in the breadcrumb mixture, pressing to
help it adhere.
5. 5. Bake for 7 -
10 minutes, then turn chicken strips over and continue baking for another 8 to
10 minutes until cooked through and golden brown.
6. Serve with
dipping sauce.
Apricot Dipping
Sauce
Ingredients:
1/4
cup Dijon mustard
1/3
cup apricot preserves
1/2
teaspoon chopped fresh thyme
Directions:
1. Whisk the
mustard, preserves, thyme and 1 tablespoon water together in a small bowl. (It helps to place the preserves in a small
bowl and melt in the microwave first).
2. Store
refrigerated until ready to serve.
