30-Minute Mini Meat Loaves



Today seemed like a good day for a meat loaf dinner. So once again I went on a search for a recipe that did not use bread or bread crumbs. I have a real issue with any type of wet bread or anything like wet bread.
This time I actually  found a recipe that made sense and didn't use a substitution for the bread.
Here is what I found:

30-Minute Mini Meat Loaves

Ingredients

1/4 cup ketchup
1  tablespoon brown sugar
1/2 lb ground beef
1/4  lb ground pork/ or turkey
1/4 cup  Bisquick
1/4 fresh ground teaspoon pepper
1/4 teas of sea salt
1/4 teas of garlic  powder
1/2  onion, finely chopped
1/2 egg (blend the egg and use half of mixture
2 slices of bacon (your choice to use)


Directions

1. Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve some for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
2. Spray 12x12 -inch pan with cooking spray. Place meat mixture in pan; pat even.
3. Cut lengthwise down center and then crosswise into six  loaves.
4.  Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved
ketchup mixture.
5. Bake 18 to 20 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F.

To make this a real comfort food dinner serve with mash potatoes and green beans.
I also like apple sauce with this dinner.
Keep out two mini loafs  and freeze the other four.
I like to keep out the second loaf so I can make meatloaf sandwiches. You know you always want more!
Now you cannot get much more cost effective than that!
