Bisquick Lemon Pound Cake
Today I am in the mood to make a pound cake. I got the idea yesterday when I was cleaning out my pantry where I keep my baking pans.
About a year ago I had purchased four mini cake pans at goodwill and finding them made me think about what I could make.
I though something citrus would taste good and I do have a great recipe from The Red Lion Inn for Lemon Pound Cake but I am not in the mood to put a lot of effort into making this pound cake. So instead of the The Red Lion Inn recipe I turned to making one with Bisquick.
Here is the recipe I chose to make:
Bisquick® Lemon Pound Cake
Cake
2 1/2 cups Original Bisquick mix
2/3 cup granulated sugar
1/4 cup butter or margarine, melted
3 eggs
3/4 cup milk
1 teaspoon vanilla
3 tablespoons grated lemon peel
Glaze
1/2 cup powdered sugar
1 tablespoon lemon juice
1. Heat oven to 325°F. Spray bottom only of 9x5-inch loaf pan with baking spray with flour.
2. In large bowl, beat all cake ingredients except lemon peel with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. 3.Stir in lemon peel. Pour into pan.
4. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of cake from pan with metal spatula.
5. Remove cake from pan to cooling rack. Cool completely, about 1 hour.
6. In small bowl, mix powdered sugar and lemon juice with spoon until smooth. Drizzle glaze over cake
I use two of my mini cake pans so I can put one away for another day and it makes this an even more cost effective recipe.

Anyway you eat this pound cake it always taste so good!
