Breakfast Granola Baklava

Breakfast Granola  Baklava

I was reading a recipe for Baklava and it brought back memories of the autumn days years ago when I would make trips to the Bristol mountains in NY state to get my grapes to make grape pie. On the way we would stop at the Wizard of Clay in Naples, NY(http://www.wizardofclay.com/) to look at pottery then on to  to have lunch at the Redwood inn also in Naples (6 Cohocton Street
Naples, NY 14512). One of their specialties was Baklava. I love this treat every once in a while especially from this restaurant.
I enjoyed reading the recipes but at the same time I wanted to come up with something healthy  and totally enjoyable and of course was easy to make, not to mention affordable.
Here is what I came up with after some experimentation:

Breakfast Granola  Baklava

Ingredients

Syrup
1/4  cup sugar
1/2  cup honey
1/3  cup water
2  teaspoons lemon juice
1/8  teaspoon ground cinnamon
Dash salt
 dash ground cloves
Nut Filling
3/4 cup of granola
1/4 teas flax seed (I use the ground verison)
1  tablespoon sugar
1/2  teaspoon ground cinnamon
Dash salt, if desired
Biscuits
1  can refrigerated biscuits (8 biscuits)

Directions

1. Heat oven to 350°F. Generously spray 8 (2 3/4x1 1/4-inch) nonstick muffin cups with CRISCO® Original No-Stick Cooking Spray.
2. In 1-quart saucepan, mix syrup ingredients; heat to boiling. Remove from heat; cool 10 minutes.
3. Meanwhile, mix filling ingredients
4.Separate dough into 8 biscuits. Separate each biscuit into 3 layers. Place 1 biscuit layer in bottom of 1 muffin cup.
5.  Brush dough with syrup; top with 1 1/2 teaspoons granola filling and drizzle with 1 1/2 teaspoons syrup.
6. Place second biscuit layer on top; press edge of second biscuit into side of bottom biscuit.
7.  Brush with syrup
8.  top with 1 1/2 teaspoons granola filling and drizzle with 1 1/2 teaspoons syrup.
9.  Top with third biscuit layer. Brush with syrup; sprinkle with 1 teaspoon granola filling.
10.  Repeat with remaining biscuits. Reserve remaining syrup (about 1/2 cup).*
11. Bake 18 to 22 minutes or until deep golden brown. Cool 1 minute. Remove from pan. Serve warm with remaining syrup.

If you want a most expensive and more authentic tasting version then instead of the granola use 1/2 cup of slivered almonds and 1/4 cup of chopped Walnuts.
Its up to you which version you use they are both awesome.
