Pasta, Sauce, and Salad
Today I looked through the refrigerator and found onion, green pepper, celery,fresh garlic, and yellow squash to use up before they went bad.
Its a cool overcast day and spaghetti and sauce with a green side salad sounded perfect for today.
First though I had to make sure I had tomato paste, pasta, tomatoes,and wine I did.
Next was checking what I had to use up in the freezer and there I found hamburg and Italian sausage.
I then went out to my porch and got some fresh herbs. rosemary, oregano, and parsley.
After that I checked the spices. I needed Italian seasoning and fennel. Yup I had both.
I had all I needed and put together a rich sauce for dinner tonight.
Time to assemble everything. The first thing I did was ground up the meat, followed by the herbs and vegetables.
When I was done I put everything but the garlic in a frying pan to cook. Later when the meat was browned and the vegetables were starting to soften I added the garlic.I added the garlic last because I did not want to overcook it. When you overcook garlic it gets bitter and ruins he sauce.
I waited about five minutes then added the can of tomatoes and the tomato paste. I then added a can of water using the tomato paste can and then a can of red wine. Ok, I admit I added two!
Once everything was cooking on simmer I assembled a green salad.
Everything has been cooking for about an hour now and the smell is driving crazy so I think I will leave you know and go spoon some sauce over some bread.
Yesterday I made this for dinner.
I mixed the sauce and pasta and topped with fresh chopped onions.
Today I will freeze what is left.
I will have two one cup packages ready to use. Then I will have another two packages of sauce and pasta. I will have some great meals then ready to pop in the microwave and it gives me four more dinners. That is a total of five meals from a couple of cans, two pieces of meat and leftovers.
That brings the cost of each meal down to approximately fifty cents. Now how can you beat that?
