30-Minute Beer Cheese Soup
It's that time of year when we want soup but maybe not always the same old thing. I was searching though the internet for inspiration when I came across a version of this soup.
I liked the idea of this soup, after all who does not like beer, cheese, and whipped cream?
I made it my way so it was affordable. This is what I came up with:
Ingredients
1/4 cup butter or margarine
1/3 cup finely chopped carrots
1/4 cup finely chopped celery
1/4 cup finely chopped onion
1/2 cup quick-mixing flour (Wondra)
1/4 teaspoon paprika
dash fresh ground black pepper
dash ground red pepper (cayenne)
1 1/2 cups chicken broth
1/2 cup whipping cream
2 cups shredded sharp Cheddar cheese (16 oz)
1/2 can (12 oz) beer ( I think you can figure out what to do with the rest of the beer)
Directions
1 melt butter over medium heat.
2 Add carrots, celery and onion; cook about 10 minutes, stirring occasionally, until celery and onions are transparent.
3 Stir in flour, paprika, black pepper and ground red pepper. Add broth; heat to boiling over medium heat. Boil and stir 1 minute.
4 Reduce heat; stir in whipping cream and cheese.
5. Heat until cheese is melted, stirring occasionally.
Stir in beer.
If desired, serve with popcorn.
