Eggs In The Basket


Do you remember from your childhood when mom would take a slightly toasted piece of bread then cut a hole in it, then she would put the egg in a hot skillet and crack in the center? Yes me too.
This morning that is exactly what I made this morning. 
Here is how I did it.

Directions:

1. I took a 6" skillet out and heated some oil in it until it was screaming hot.

2. While the oil is heating up take one or two slices of bread, first cutting a whole in the center with a juice glass then I  put in toaster and toast slightly. For that to me it means toast until I see a little  light brown starting to form on the toast. In my cheap toaster that means I put the toaster on medium.   

3. Now the pan is hot enough and that took perhaps a minute or two and its time to put the toast in the pan and break an egg to go in the center.( If you are as bad at doing this as I am use a small bowl to break the egg into first just in case you break the yoke or get a piece of shell in the egg.)

4. Cover the pan and turn down the heat to medium low. Allow the egg to  cook until you see white forming over the yoke and the clear white around the yoke is also white.

5. Now its time to take a spatula and turn the egg and toast over.

6. It is only to make an easy over egg not cook it.  So if you want the center soft remove the egg from the pan within thirty seconds, If you prefer a solid center then remove within one minute.

7.  Now its time to eat!

As you see from my plated I like fruit with the egg in the basket. I opened a can of triple cherry mixed fruit and scooped a tablespoon on my plate. Also on the plate is mustard that I enjoy with this particular meal.
