Turkey Cakes with Chipotle Mayonnaise
This is such a good option for left over turkey. Its different and so good!
Turkey Cakes with Chipotle Mayonnaise
Ingredients
• 1 small onion, cut up
• 2 tablespoons of dried cilantro or cup 3/4 cilantro leaves
• 1 cup(s) leftover mashed potatoes
• 3 cups leftover turkey, skin removed, cut into large chunks
1 cup frozen corn
1 tablespoon all-purpose flour
• 2 tablespoons vegetable oil
• 1 clove garlic, crushed with press or 1 tablespoon
• 2 tablespoons lime juice
• 1/3 cup mayonnaise
• 2 teaspoons Franks Red Hot hot pepper sauce or chili

Directions
1. In food processor pulse onion and adding the cilantro
Add potatoes and turkey of processor
combine (turkey should be chunky). Shape by 1/3 cups into eight 3- inch patties; dust with flour.
2. In nonstick 12-inch skillet, heat 2 tablespoons oil over medium heat. Add turkey cakes; cook 10 to 12 minutes, until golden on both sides, turning over once.

Sauce
3. Meanwhile, in 1-quart saucepan, heat remaining oil over medium heat.
4. Add garlic; cook 30 seconds, stirring.
Stir in corn; heat through
5. Stir in lime juice and remaining cilantro leaves. In cup, stir mayonnaise and hot pepper sauce.
6. Serve turkey cakes with chipotle mayonnaise
