Champagne Cake
New Years Day is coming and for some reason the New Year is way more important that New Years Eve. I guess I never though that the year ending was as important and the New Year beginning and all the possibilities it brings with it.
I have a tradition of making split pea soup and ham salad for this important day.
The recipe for this soup and ham salad has not changed but I am making a desert that was always a family favorite.
We use to buy this cake when I was a teen at Eberts Bakery in Northgate Plaza. It was always the cake we bought no matter what the occasion.
I am sure Eberts did not use a box mix to make this cake but I do since baking is not my specialty, not even close but I am sure you will enjoy this cake if you chose to make it.
Here is the recipe:
Champagne Cake
Ingredients:
Cooking spray
1 box (1-pound 2 1/4-ounce) moist white cake mix
1 1/4 cups extra dry Champagne (I use Brute)
1/3 cup vegetable oil
3 large egg whites
1 can whipped white frosting
1 teaspoon Champagne
Directions:
Preheat the oven to 350 degrees F. Lightly coat the bottom of a 9 by-13-inch cake pan with cooking spray and dust with flour.
You can also use two round cake pans if you plan on using a filling or frosting in the center.
In a large mixing bowl combine the cake mix, Champagne, vegetable oil, and egg whites.
Beat on low speed with an electric mixer until just combined. Scrape down the sides of the bowl with a rubber spatula and continue beating on medium speed for 2 minutes.
Pour into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean.
Remove it from the oven and cool completely.=Empty the frosting into a small bowl and add the Champagne then frost .
Here is is a frosting I like:
Strawberry Filling
Ingredients:
2 1/2 cups of strawberries, halved or sliced thinner if you like
1/4 cup sugar
1/2 cup water
2 tsp. cornstarch
Directions:
Crush 1/2 cup berries;
add water; cook 2 minutes;
sieve.
Mix sugar and cornstarch; gradually stir into berry juice.
Cook, and stir till thick and clear.
Cool slightly; pour over sliced strawberries.
Cool to room temperature and use as cake filling.
However you chose to make this cake its delicious!
