I though long and hard about dinner
because I may have a guess and I wanted to prepare something special that is delicious
and as always affordable and can serve a purpose.
The idea came to me while I was shopping
at Aldies and at the same time wondering where to get a ham bone for my soup
for New Years Day, Then I saw the solution right in front of me. They had a nicely
trimmed ham for 99 cents a pound with the bone in. So I looked to see if I could
find a smaller ham and I did! Problem
solved and what to have for Christmas dinner was beginning to form in my head. This is the menu I came up with and decided to
publish it early in case it might appeal to you as well.

Here is how I am
going to prepare this meal:
The Ham
I have a fresh
pineapple I will cut up and use through out this meal.
Coat the ham with
honey mustard and top with slices of pineapple and place in crock pot
and cook on low for several hours so the ham absorbs all these delicious
flavors.
Sscalloped Potatoes
Ingredients
3 thinly sliced potatoes
½ onion thinly sliced
½
cup of bread crumbs
½
tsp sea salt
¾
cup of hot milk
Directions
Preheat
oven to 400 degrees
Arrange
alternate layers of potatoes and onion in a buttered casserole dish. Over each
layer, sprinkle bread crumbs
Add
salt to milk and pour over all.
Top
with remaining bread crumbs and dot with butter
Cover
and bake in preheated oven for thirty minutes
Until
brown on top and potatoes are tender.
Asparagus
Tips
Place Asparagus in butter dish
in the oven during the last fifteen minutes of the potatoes cooking. Top with
butter and juice from canned mix citrus fruit. (We are using the canned fruit
in our citrus salad)and a little nutmeg
Citrus Salad
Ingredients:
1 can of citrus fruit-this can has juice, grapefruit, and oranges
Remainder
of pineapple chopped
I
am using cuties which are tiny tangerines
Directions:
Mix
together
Chill
until ready to serve
Dessert
Lemoncello

is light layers of mousse and sponge cake infuse with lemon juice
