Going Meatless Once A Week

BAKED CANNELLINI BEAN CASSEROLE


At least once a week it is good to have a meatless day.
Why? 
Did you know by going meatless once a week some of the benefits  includes:

 I bet this idea is getting more interesting isn't it?
This week this is the recipe I intend to make:


BAKED CANNELLINI BEAN CASSEROLE


 Ingredients:


1  can cannellini or northern beans, drained and rinsed
1 small can tomatoes, chopped ( I amp it up with tomatoes&green chilies)
3/4 c. bread crumbs
1/2 c. chopped onion
2 tbsp. grated Romano cheese
1 tsp. soy sauce
1 tsp. minced garlic
1/2 tsp. basil
1/4 tsp. oregano
1/8 tsp. thyme
Pinch pepper
3 tbsp. grated Parmesan cheese

Directions:

Preheat oven to 350 degrees.
 Coat a 2 quart casserole dish with vegetable cooking spray
 In bowl combine all ingredients except Parmesan
 Turn into prepared dish. Cover and bake 30 minutes
 Sprinkle with Parmesan
 cook uncovered 30 minutes more until cheese is melted.
