Balsamic-Glazed Chicken Breasts
Chicken, chicken, chicken! The same ol' problem how to make it different so it is not boring an tastes good.
I found this recipe and it is different,easy and tastes good. How much more can you ask from a humble piece of chicken?
Here is the recipe:
Ingredients:
Glaze
1/3 cup packed brown sugar
1/3 cup balsamic vinegar
1 teaspoon chopped fresh rosemary leaves
1 teaspoon finely chopped garlic
Chicken
2 bone-in skin-on chicken breasts (8 oz each)
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1 Heat a frying pan/skillet while In small bowl, mix glaze ingredients; set aside.
2 Sprinkle chicken with salt and pepper.
Place chicken in pan, skin side down, over medium heat
Cook 10 minutes.
Turn chicken; brush half the glaze evenly over chicken.
Continue cooking and brushing with remaining glaze 10 to 12 minutes longer or until juice of chicken is clear and when thickest part is cut to bone (170°F).
Every thing on this list is available at the Dollar Tree with the exception of the chicken which is on sale this week at most of the supermarkets and alway a good price at Aldies.
Now your saying how can I short cut this?
First all you real cooks and chefs walk away don't look back this is not something you will want to read, trust me on that.
Now back to all of you survival cooks like myself here is what you would do with limited time or you are too tired to follow the traditional recipe.
It's not so hard to do. Take out some of your already cooked chicken you have in the freezer from Tyson, Perdue or what ever frozen already cooked chicken you have.
Next mix the glaze and then marinate the chicken in the glaze at least an hour before you heat it in the microwave.
Your choice how you chose to fix it but I do know it's worth making.
Extra note. Get your vinegar at the Yankee Dollar if you have one by. They have exceptional vinegar there. While picking up the balsamic vinegar get some of the red wine and white wine vinegar they have there as well.
I like to use the red wine on an inexpensive cut of beef to help tenderize it.
Enjoy this chicken and perhaps serve it with rice and a green vegetable or salad with a balsamic vinegar based dressing.
