This week I went over to Walmart to get some supplies. I had   problems with my sink because of the cold when some fittings came loose  and now they need repairs.
 That means no kitchen sink. That also means I had to rethink what I was going to  cook this month because believe me its nor easy doing clean up in the bathroom sink. Not impossible but difficult.
Today I decided to turn my Marinated Kale Salad with Apples and Oranges into a main meal. This is easy to make and I only need two bowls and utensils  that will have to be cleaned later.
I purchased kale, and halos (mini tangerines). The rest I had at home.
When I got back I chopped up the kale and sliced up the fruit as you see in the recipe below it has apple and oranges, but in this case apples and tangerines, and to make this an entire meal I added Tyson already cooked chicken ( I got this to make my life easier until I can afford to get the sink fixed) and sprinkled some trail mix I get at the Dollar Tree on top  . 
Next I made the dressing and juiced two halos instead of buying more mandarin  oranges in a can. I have always said think outside the box and for convenience sake  I used what I had which made this meal even more affordable.
 The directions didn't change they are the same as below just with some additions and substitutions as mentioned above.
It turned out to be a great and satisfying meal that gave me all the nutrition I needed for today. 
No I did not forget the flax seed. I added that to my breakfast sandwich that I made this morning and to my lunch I will add it to my vanilla yogurt that will also have my trail mix in it.
I am trying to stick to my goal of eating well and getting all the necessary nutrition that I need on a daily basis.
I do admit I still have to work more greens into my diet but over all I am doing pretty good.

I use the trail mix in oatmeal, salads, and yogurt to name a few ways I use this product on almost a daily basis and two bags are enough for the month.
I believe you will enjoy this meal as much as I did and if you want a hot meal wait to add the chicken to just before serving then heat it in the microwave for one minute.

Staying with the idea of food that is really good and at the same time has the bonus of being good for you today I am posting a salad that combines two of my favorite foods. Kale and fruit. 
We all are aware that Vitamin A and Vitamin c are good for us and we do get this in the apples and the oranges.But there are more benefits that you may not be aware of.

Marinated Kale Salad with Apples and Oranges




INGREDIENTS:

Dressing: 

4 Tbsp canned mandarin orange juice 
1 Tbsp olive oil
1 Tbsp white wine vinegar
½ tsp dijon mustard
Salt and pepper, to taste

For Salad:

3 to 4 cup finely chopped kale leaves (toss the tough ribs)
½ cup canned mandarin orange slices
½ medium red apple (Gala or Red Delicious), chopped
1 Tbsp raw sunflower seeds

DIRECTIONS:

In a small bowl, whisk together the dressing ingredients.

Place the kale in a medium bowl and drizzle the dressing on top. 
Toss a few times until well coated with the dressing.
 Let the kale sit for about 10 minutes, tossing often to re-coat with the dressing. 
Add the remaining ingredients, toss again,  and serve.

 and serve.

This salad is so good for you but thats not the best part, the best part is its delicious!
