Potato Pancakes
Yesterday we make salisbury steaks with mashed potatoes and now today we have left over mashed potatoes and what comes to mind right away is potato pancakes.
There is nutritional value in these potato pancakes:

Vitamin D
Vitamin B-6
Vitamin B-12
Magnesium
Here is the recipe:
Potato Pancakes
Ingredients:
1 eggs
1/8 cup milk
1 cups of potatoes
1 tablespoon onions or onion flakes
1/4 teaspoon sea salt
1 tablespoon butter or margarine
Directions:
Beat egg in medium bowl with hand beater until fluffy
Stir in milk, potatoes, Bisquick, onions and salt
Melt 1 tablespoon of the butter in 12-inch nonstick skillet over medium heat
Using 1/4 cup potato mixture for each pancake, place mounds into skillet
Flatten each with spatula to about 4 inches in diameter.
Cook pancakes about 3 to 4 minutes on each side or until golden brown
Remove from skillet; cover to keep warm.
Serve them with sour cream or Applesauce.
Some suggestions to serve potato pancakes
1. potato pancakes with applesauce on top, bratwurst or other white sausage alongside
2. potato pancakes topped with sour cream and a slice of smoked salmon
