Stuffed Onion & Cheese Focaccia Pizza



The other day when I went shopping I found this  Focaccia marked down to a dollar.
I figured this would be a good time to try it since I never had before.
When I got home I gave it a try and didn't like it. It was too hard and too dry for my taste so I put it in the freezer until I could figure out what to do with it beside throw it out. anyone that knows me knows I don't like to waste things.
Today while making saffron yellow rice for dinner I got an idea. I would turn the focaccia into a stuffed pizza!
I took the focaccia and then did my usual and went though the refrigerator and pantry. Soon I had assembled what I would use.
Here is how I made it:



                             Stuffed Onion & Cheese Focaccia Pizza

Ingredients:

focaccias
1/2 onion
1/2 of shredded cheese
3 slices of American cheese
can of tomatoes with green chilies

Directions:.


Slice the  focaccia in half and fill the middle with shredded cheese
put top back on and cover with shredded cheese, tomatoes that are drained and onions that are sliced.
cover all this with American cheese
place in oven at 400 degrees for twenty minutes
Allow to cool for a few minutes it will make it easier to slice.

I had this for an early lunch and enjoyed it. I was glad I did not give up on using the focaccia.
It also gave me three more slices I could freeze enjoy for another time.
