Ham, Cheese, Potato Casserole
Today I got an email from the Food Network.
I don’t know why I am still on the list after they
fired one of my favorite hosts for saying something twenty years ago! No I am
not a bigot I am 25% West Indian and African. I did
sent the network my feelings on the matter.
Anyway lets get back to the recipe.
It was a breakfast casserole that
got my attention.
So I went and looked at the recipe. It sounded good but was
for too many people. Would have been way too expensive but it did what it was
suppose to do it encourage me to think outside
the box and make my own version with the guidance of the recipe they proposed.
That is exactly what I did. It is no longer a breakfast meal it is now dinner. Here
is what I came up with:
Ham, Cheese, Potato Casserole
Ingredients:
1 box stove top stuffing (the generic version at
the Dollar Tree is as good or better)
1 Tablespoon of butter or margarine
1 ½ cups of water
2 potatoes chopped
1/3 cup of milk
¾ cup of
shredded cheese
¼ cup of Parmesan cheese
1 sprinkling of cayenne pepper
Sea salt to taste
Fresh ground pepper to taste
1 teas of mustard
8 ounces of ham (or what ever meat you have on
hand)
½ onion chopped
½ of a tomato
Directions:
Place the stove top stuffing in a pan and mix
with the water and butter.
In a separate small frying pan chop up the onion
and cook until softened and caramelized.Meanwhile chop up the tomato and add to the
onions you have cooked. In a bowl whisk the eggs, milk, ½ of the cheese, salt,
pepper, cayenne pepper, and mustard together.
While you are
doing this put the chopped potatoes in a baggie and place on a microwave safe
dish and put in the microwave for 5 minutes
Now your ready
to mix it all together and place into a cake pan you have sprayed with pam.
Top with the remainder of the cheese and place in
the oven at 350 degrees for 40 minutes.
Ready to serve. I will serve it with a bagel thin, and enjoy!
