Chicken & Fruit With Fruit Salad Dressing


I wanted a salad for dinner tonight but I wanted to put warm chicken on it. Usually I use toss salad, trail mix, and chicken for the base of the salad.
Today I had to get more creative because this is the second week without a car so there is no running to the store to get what ever I am out of.
Maybe that is not a bad thing. I made an awesome salad.
I started with lettuce mix and then I added walnuts, shelled pumpkin seeds, and sun flower seeds.
I didn't measure I just took a hand full of each and tossed it with the salad after I chopped up the lettuce. It’s up to you how much you add. 
Next I made the dressing.

Dressing: 

2 Tbsp canned mandarin orange juice 
2 Tablespoons of fresh pineapple 
1 Tbsp olive oil
1 Tbsp white wine vinegar
½ tsp Dijon mustard
Salt and pepper, to taste

Then after I tossed the salad with dressing I topped it with the pineapple, orange, and Tyson chicken pieces that I heated in the microwave for thirty seconds. 
Then I took a piece of garlic and cheese toast from the freezer then allowed it to thaw and chopped it into bite size croutons and dinner was ready.
I though this would be a good dinner to make especially if we get that huge winter storm. I don’t know about you but after I shovel I will not feel like cooking and this is something that can be made ahead of the time and is homemade.
If you do make this ahead of time please keep the salad separate from the wet ingredients until you are ready to eat.
You don’t need a soggy salad.
