Drunken Brandied Pork Chops

Drunken Brandied Pork Chops

I have been cleaning out my books and of course stopped long enough to look at my saved recipes and found several I want to share with you that I have as always made proportionate and of course affordable.
I won't worry about you having liquor and wine on hand. If you have been trying some of my recipes then you have already bought brandy or whisky and of course wine.
Here is the first of these recipes:

Drunken Brandied Pork Chops

Ingredients:

2 bone-in pork chops, about 1-inch thick
2  tbs olive oil
1 small onion, chopped
4 oz fresh mushrooms, sliced
1 clove garlic, minced
1/4 cup brandy -or- whiskey

Sauce:

1/4 cup sour cream
1/3 cup water
1/2  tsp kosher salt
1/4 tsp black pepper
1 tbs flour
2 sprigs fresh thyme -or- 1/4 tsp dried thyme

Directions:

Mix all sauce ingredients in a small bowl.  Set aside.

Preheat oven to 300 degrees F.

1. Heat 1 tablespoon of  olive oil in a large heavy oven-safe skillet over medium-high heat. Brown pork chops on both sides very well. Remove chops from pan.

2..Add the remaining olive oil and heat.  Add mushrooms, onion and garlic, and saute for about 3     minutes.
3. Add brandy and cook until liquid is almost evaporated.
4.  . Add sauce and stir well.  Add pork chops back to pan and cover them well with the sauce.

5,  Cover the skillet with either an oven-proof lid or aluminum foil and bake at 300 degrees F
for one hour.

I think this is a great Sunday dinner.
Enjoy!
