Pasta With Smoked Mussels,Capers And Tomatoes
I bet your wondering why I am posting such an expensive dish aren't you?
Again I would never do that to you. Right now the Dollar tree has sardines, smoked oysters, and smoked muscles.
That's why I grabbed some while I could get them at this great price.
This is my version of this dish. Some people like to add sardines others don't like mushrooms. Add and subtract according to your taste.
Pasta With Smoked Mussels,Capers And Tomatoes
Ingredients:
2 pound linguine (food network prefers macaroni for this dish. So what ever you chose is fine)
1/3 teaspoons olive oil
2 cloves garlic, peeled and minced (the jarred garlic you would use the same amount)
1 cup of grape tomatoes (they will burst open in the pan so put in whole)
13.66-ounce cans smoked mussels, drained
1/4 cup of chopped onions
2 tablespoons chopped Italian parsley or 1/2 teas of dried
1/4 tablespoon of basil
1/2 cup of mushrooms sliced
1 1/2 teaspoons of sea salt
Freshly ground pepper to taste
2 tablespoons of olive oil
2 tablespoons of lemon juice
Instructions:
1. cook pasta until al dente, about 10 minutes. Drain.
2. Meanwhile, heat the olive oil retaining 2 tablespoons for later. in a medium skillet over medium heat.
3. Add onions for two minutes until softened then add the garlic and saute for 2 minutes; do not let it brown.
Add the tomatoes and mushrooms until cook just until heated through, about 4 minutes.
4. Remove from heat and stir in the mussels, parsley, basil, salt and pepper.
5.Place the linguine in a large bowl and toss with the mussel mixture and the remaining 2 teaspoons of olive oil and lemon juice.
6. serve immediately.
