Slow-Cooker French Onion Soup
Suddenly I see a lot of recipes for French Onion Soup so I go to my own recipe file and pull out a family favorite for this soup. My recipe was derived from a Diet Workshop recipe book that I still have.
I did make changes.You know I always have to add my own touch.
This is the recipe I came up with years ago that my family always enjoyed.
Slow-Cooker French Onion Soup
2 cups thinly vertically sliced onion
1 1/2 tablespoons margarine or butter, melted
1/4 cup dry white wine
1/4 teaspoon thyme
2 tablespoons all-purpose flour
1 tablespoon Worcestershire sauce
1/2 teaspoon sugar
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt
2 cans ready-to-serve beef broth
Cheesy Broiled French Bread
2 slices French bread, 1 inch thick
1/4 cup shredded mozzarella cheese
Sprinkling of grated Parmesan cheese
Directions
1 Place Liner in slow cooker bowl.
2 In lined slow cooker, mix onions and margarine.
3 Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.
4 Mix flour, Worcestershire sauce, sugar and pepper, wine, and beef broth.
5 Stir mixture and broth into onions.
6 Cover and cook on low heat setting 7 to 9 hours (or high heat setting 3 to 4 hours) or until onions are very tender.
5 Prepare Cheesy Broiled French Bread. Place 1 slice bread on top of each bowl of soup. Serve immediately.
