The Original Apple-bee's Bourbon Street Steak Marinade
I have been posting meals that are ten minutes or less this week and I do and have enjoyed these meals and of course in our busy day to day life these recipes provide us with a quick and satifying meals, but every now and then we want to make something totally homemade and deep down soul satifing.
This week my friend Lee posted a recipe on Facebook for a Burbon Street Rib Eye Steak. Yum! It sounded so good I wanted to know more and find out where the recipe came from and to be able to prepare a restaurant quality meal.
The first thing I found was the name of this steak had nothing to do with the bourbon used in the recipes but was named after Bourbon Street in New Orleans.
After doing a little more research I found a version of what Lee had posted but was the way Applebees makes it. That got my attention! I mean who doesn't enjoy eating at Applebees?
There were some additional spices that made sense. Bourbon is loaded with sugar and adding more sugar as is called for in this the recipe that Lee posted sounded good but I knew there had to be more than Lemon juice to cut the sweetness and that turned out to be true. Here is how Applebee's makes this traditional dish:
The Original Applebee's Bourbon Street Steak Marinade
Ingredients:
1/2 cup water
1/3 cup bourbon whiskey
1/2 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons Worcestershire sauce
1 tablespoons lemon juice
2 small steaks
2 tablespoons soy sauce
4 teaspoons chili powder
4 teaspoons minced garlic
2 teaspoons paprika
2 teaspoons ground black pepper
1 teaspoons cayenne pepper
1 teaspoons onion powder
1 teaspoon ground oregano
Directions:
1 all ingredients to bowl whisk well till smooth and mixed well.
2 marinade in refrigerator.
3. Preheat the grill or stove to medium−high
heat.
4. While the steak is marinating this would be a good time to start adding vegetables to the cast iron pan if you are using the stove instead of the grill.
I would start by adding peanut oil or olive oil to the heated pan. To the pan add half a sliced onion, a potato chopped in four sections and cook until the onion starts to soften and begins to caramelize this is the time to add the steak and the mushrooms to the pan.
5. Grill or cook the steaks for 12 to 15 minutes, or until desired doneness,
turning them over halfway through.

Definition of
Caramelizing food:
This process references the sugars in a food.
Usually vegetables or anything that has an amount of sugar in the food are the ones used. When heat is applied, the sugars undergo a chemical change and the sugar 'toasts'. The way caramel is made is by literally toasting sugar in a small pan and melting it and cooking the liquid sugar until it becomes deep amber... And that is caramel. Hence caramelize in other foods.
