  •  Bake Coconut Cream  Parfait

  • One of my favorite foods is coconut.
  • I found a recipe I liked but I did not want to commit to a pie I preferred a simple Parfait.
  • But I liked this recipe so much I decided to work on it and make it a parfait that was easy and affordable, but most of all delicious!The first thing I did was get rid of the pie shell, next I shrunk the recipe down to a reasonable size, and last and most important I made it fast and affordable. 
  • Here is what I came up with:

  • Ingredients:


  • 1 pkg (3.4 oz ) instant coconut cream pudding
  • 1 cup evaporated milk, chilled
  • 1/2 cup cold water
  • 1 cup (1/2 of 8 oz tub) extra-creamy whipped topping

  • Directions: 
    In a large bowl, add the pudding mix, milk and cold water. Beat at low speed with an electric mixer for 2 minutes or in a blender.
    let stand for a minute or two. So it thickens.

    Fold the 1/2 (8 oz) tub of whipped topping into the pudding mixture until the topping is incorporated into the pudding. Pour into cups and  refrigerate until pudding layer is firm, about 3 hours.

    Toppings when this is served could be chocolate sauce, coconut, whipped topping.
