Grandma's Easter Meat Pie



I decided I wanted to find an option for the traditional Ham dinner for Easter. Many of us who are alone or with one other person may want  a different choice  for this holiday meal.
Here is what I came up with that sounded really good and would be a good use for left over ham:

Grandma's  Easter Meat Pie

Ingredients:

1 package refrigerated pie crusts
1 (1-pound) container ricotta cheese
3 eggs
1/2 pound cooked ham, diced
1/4 pound Genoa salami, diced
3/4 cup shredded mozzarella cheese
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 tablespoons grated Parmesan cheese

Directions:

Preheat oven to 325 degrees F. 
In a large bowl, combine ricotta cheese and eggs; beat with an electric mixer. Stir in ham, salami, mozzarella cheese, garlic powder, and pepper. Pour mixture into crust and sprinkle with Parmesan cheese.
This part is up to you. You can either leave as is to bake or  place pie crust on top and fold edges together to seal.
 Cut six 1-inch slits in top crust.
Bake 1 hour, or until crust is golden brown. Cool 10 minutes, then slice and serve.
