Salad Day!




I woke up not feeling well. I had overdone it big time this week.
Since I knew the house was not really going to be worked on I figured I would work on the salads for the week with a bananna pudding thrown in for good measure.
The first thing I did was get the vegetables ready to be used and then I put a large pot of water on to boil.
The first vegetable to go in was the potatoes. They take the longest to cook. After 5 to 8 minutes I added a pound of macaroni to the same  pan of boiling water next I added six eggs. Then I put a wooden spoon across the top to keep the pan from boiling over. It was a helpful hint sent to me on Facebook this week and believe it out not it worked perfectly!
While I let these cook I got ready the dressing for macaroni salad, potato salad, and egg salad. (I posted this recipe for the sauce last week)
Next while everything was cooking I made the  banana pudding. I used the instant banana pudding this time but next time I will use the cooked version.
There are lots of fancy versions but being the survival cook that I am I took the fast and easy way out. I put the pudding and milk in the blender and while this was blending and getting thick I sliced the bananas.Next was the part I was not looking forward to. It called for vanilla cookies or lady fingers at the bottom and well it's just me but I don't like soggy bread or cookies. Then it hit me what I could do. I got out my one cup grinder and make cookie crumbs.
Once that was done and the pudding was thick I assembled the banana pudding, crumbs on the bottom topped with alternate layers of pudding and bananas then sprinkled some more crumbs on the top and it was done.
After this was done the eggs, macaroni, and potatoes were ready to drain and the salads to be made.
It took about an hour to get all this done but I have a pound or more of potato and macaroni salad, a big bowl of banana pudding, and enough egg salad for two days.
When all was said and done I also  had 4 two cup baggies to freeze of the elbow macaroni to use at a later date.  Nothing left to do but sweep the house and write this article.
Later I will enjoy my salads with two of my favorite hot dogs but until then I will relax and enjoy the rest of my Sunday.
