Shhhh Make Believe Lasagna!
I was in the mood today for lasagna but it is the beginning
of the month and I can not afford to get the ricotta cheese and it was time to
use up some of what was left from last
month. I needed to get creative so off to the net I went to find a solution. After
some time I found what I was looking for and I was able to assemble a delicious
lasagna for dinner tonight.
This is what I did:
Shhhh Make Believe Lasagna!
Ingredients:
1/4 pound of pasta (egg noodles, lasagna noodles broken in
half or any wide noodle)
1/4 pound ground beef
14 oz spaghetti sauce
1 cup of vegetables (I used tomatoes, zucchini, and onions.
In otherwise what I had on hand)
1/2 cup cottage cheese
1/2 cup sour cream
2 teaspoons garlic
1 onion
1 teaspoon Italian seasoning
Sea salt to taste
Directions:
Heat oven to 375 degrees
Put pasta in salted water and while the pasta is cooking
Brown the ground beef and half of the onion you have finely
chopped to the beef add a teas of Italian seasoning salt and pepper
While the beef and
pasta are cooking place 1/2 cup of cottage cheese and 1/2 cup sour cream in a
blender along with 1 teaspoon of garlic . Blend until smooth.
Once everything is ready its time to assemble.
Lawyer as you would when making lasagna . Noodles sauce
vegetables cheese then repeat.
Top your lasagna with shredded italian cheese and grated
Parmesan cheese.
Bake in oven for 35 minutes.
Take the lasagna out of the oven and allow it to rest for
20 minutes before serving.
Serve with a toss salad and enjoy.
I had this for dinner froze two good size meals for another day and the next day had it for dinner again.
It passes the test. I could not tell the diffrence in what I used for the cheese and it made it so much more affordable than if I had to buy the Ricotta.
