Grilled Lemon  Citrus Chicken



I was watching a program last night and they were making a citrus chicken.
It sounded pretty good so I decided to find out what was in a recipe for citrus chicken so I could make it.
Here is what I came up with based on what I had on hand:

                          Grilled Lemon Citrus Chicken

Ingredients:

1/2 cup frozen (thawed) lemonade juice concentrate
1/4 cup vegetable oil
2 tablespoons of lemon juice 
2 tablespoons grated orange peel
1/2 teaspoon salt
1 clove garlic, finely chopped
2 boneless skinless chicken breasts 

Directions:

1 In a food-storage plastic bag, mix all ingredients except chicken. 
2 Add chicken; turn to coat with marinade. Cover dish or seal bag; refrigerate, turning chicken occasionally, at least 2 hours but no longer than 24 hours.
3. Heat  grill
4. Remove chicken from marinade; reserve marinade.
5.  Place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning chicken and brushing with marinade occasionally, until juice of chicken is clear when center of thickest part is cut (170°F).
6. Heat remaining marinade to boiling; boil and stir 1 minute. Serve with chicken.
Serve with rice and enjoy!
