Honey Mustard Chicken w/ Stove Top Stuffing & Cheesecake Pudding For Desert
I am trying to use up what I have in the pantry, refrigerator and freezer.
It can be difficult not buying what I need to make things but I m able to do something with what I have today I am making boneless turkey thighs and stove top stuffing.
I used my deli honey mustard to baste all the chicken and then put it on top of the stuffing. i will cook at 350 degrees for fifty minutes and for desert I made cheestecake pudding that I will top with sugar free raspberry jam. I have some whip cream I bough at the dollar ditree so that should top the pudding very nicely!
Here is what I did;
Ingredients:
3 boneless chicken thighs
about 1/2 cup of honey mustard
1 box of turkey Stove Top Stuffing
1 1/2 cups of water
1/4 cup of butter
Directions:
I made the stuffing first. That takes a cup and a half of water and a 1/4 cup of butter.
Bring the water and butter to a boil then add the stuffing mix.
Cover for about five minutes then spread in a lined pan.
Next baste the chicken thighs with honey mustard sauce.
I get the honey mustard from the deli department. It is about two or three dollars. Now I know it sounds expensive but it really is not. It will take you a good six months or more to use it up and even using it as I did it is about twenty five cents of this deli honey mustard.
Of course you can make the honey mustard mix your self. Just remember honey is expensive so you will be saving nothing by doing this.
After the thighs are basted I placed them on top of the stuffing and put it in the oven at 350 degrees.
I will check in about half an hour and see if the chicken and stuffing needs to be covered.
Desert
While I was looking in the pantry I came across a box of cheesecake instant pudding.
Well as I said I had to use up stuff right?
Good excuse anyway.
Here is what I did:
Ingredients:
1 box of instant cheesecake pudding
2 cups of milk
2 tablespoons of raspberry jam
whip cream
Directions:
Add two cups of water to the jello and whisk for two minutes
The pudding will be well blended and you will see it is starting to thicken.
Place in the refrigerator for at least an hour so it can set up.
When you are ready to eat your desert top with the jam then the whip cream.
I know fating dinner right? I figured someone has to do it and it needs to be eaten up.
Anyway that's my story and I am sticking to it!
