Knock Your Socks Off Slow Cooker Chicken and Sausage
It's another cold day and I have to ask myself is it spring yet? I was going to make hamburgers on the grill but the day is too cold and over cast so instead I am going to use my trusty crock pot.
I looked on the internet for an inspiration and found this recipe.
I cross checked the ingredients with several other versions and this recipe and this is what I came up with after making it a reasonable size for one or two people and making sure it would only cost two dollars or less to make.
My dinner is cooking away and I can not wait until dinner time tonight!
Knock Your Socks Off Slow Cooker Chicken and Sausage
Ingredients:
1 boneless skinless chicken breasts
1 sausage your choice
1 potato chopped in large pieces
1 4 oz package cream cheese, room temperature
1/2 cup chicken stock
1/4 cup white wine (you can also sub this with beer or chicken stock)
1 1/2 cloves of garlic minced or 1 1/2 teas of already chopped garlic
1/2 small yellow onion diced
1 tb grainy mustard
1/4 tsp sea salt
1/4 tsp fresh ground pepper
serve over white rice or buttered noodles
Directions:
In a mixing bowl whip cream cheese with chicken stock, salt, garlic, mustard and wine until incorporated.
Place, chicken and sausage in the bottom of your crock pot. Place onions and potato on top.
Pour cream cheese mixture over the top.
Cover and place on high for 4 hours or low for 5-6 hours, checking it occasionally to make sure it's not thickening too much. If it is, add more chicken stock or wine.
OK I admit I am using Italian stuffed boneless chicken breasts. I did not recommend this in the recipe because this is a limited special from my favorite little grocery store Gabriel s in Scotia. Most of you don't live in my area so you would not be able to get this item unless you go to your local IGA and request it.
Salt and pepper to taste, serve over rice or pasta.
