Meatless Monday: Vegetables In Wine & Yellow Rice w/Saffron 



I had a craving for fresh vegetables and my favorite rice Virgo yellow rice and saffron.

I had a few vegetables and wanted to get some purple potatoes and a green squash to round out what I wanted to make.
The rice is by Virgo and I get it at the Dollar Tree. I never liked rice before but this rice I . It is yellow rice with Saffron.
I love the Saffron just leave it to me to fall in love with the most expensive spice you ca buy.
As far as the rice is concerned just follow the directions you have all you need at home to make it.
Here is what I did with the vegetables:

Meatless Monday: Vegetables In Wine & Yellow Rice w/Saffron 
Ingredients:

1 green squash
5 small purple potatoes
4 banana peppers different colors
2 stalks of celery
1/4 cup of mushrooms
hand full black olives

1 teaspoon of garlic chopped or from the jar
1/2 cup of white wine.
1 teaspoon of butter
sea salt and fresh ground pepper to taste

Directions:

Get a  skillet nice and hot and add the oil you prefer.Just enough to coat the bottom of the pan.
Add the vegetables to the pan once they have been cut to the size you want.
After about five minutes add the wine and cover.
This will allow the vegetables to steam.
From time to time check  the vegetables until
they get to the way you like them.
Meanwhile have the rice cooking. The rice takes twenty minutes so get this started first. Don't worry not very much to do with the rice just let it cook once you cover it.
You can see I made a lot of vegetables that is because I enjoy this combination of vegetables with chicken that I will also make this week.
Even if you make half as many vegetables use the same amount of the additional ingredients because the vegetables absorbe the wine.
Trust me this as good as it looks!
