Watermelon Salad with Rum and Mint
One of the specials was whole seedless watermelon.
I love watermelon so that was one of my purchases.
Monday being a holiday I wanted to find something different to add to my predictable meal of grilled hot dogs. baked beans. and coleslaw. I still had half of the watermelon left so I set out to find something I could make with the watermelon that would be different and to enjoy for the holiday meal.
This is what I came up with:
Watermelon Salad with Rum and Mint
INGREDIENTS:
1/4 teaspoon finely grated lime zest plus 2 tablespoons juice (from 1 lime)
1 tablespoon light-brown sugar
1 tablespoons light rum
1/8 teaspoon salt
1/2 of a chilled seedless watermelon
1 tablespoon slivered fresh mint leaves
DIRECTIONS:
1. In a bowl, whisk together lime juice, sugar, rum, and salt.
2. Using a melon baller, scoop melon into balls (you'll get about 5 cups), or cut melon into bite-size chunks.
3. Add melon to lime mixture in bowl. Sprinkle with mint and lime zest, and toss gently to combine
4. Serve immediately, or cover and refrigerate, up to 2 hours.
fresh mint is inexpensive and if you don't have rum on hand you can use the extract that you have for your baking but why not start at the liquor store and pick up what I call the airplane size bottle of rum? Seldom do these bottle cost more than a dollar or so and you will have some left for the next meal you make that calls for rum.
