Avocado & Pineapple Salsa


Summer is here and its time to enjoy the taste of frest fruits and vegetables and of course to grill lots
of great food on the grill.
Here is a recipe for a fresh avocado and pineapple salsa to serve with fish and chicken or with salsa chips.





Avocado & Pineapple Salsa

Ingredients:


1 cup finely diced pineapple
1 California avocado, pitted, peeled, and cut into 1/4-inch dice
1/8 cup fresh cilantro, chopped
1/8 cup finely chopped onion
1 fresh serrano or jalapeño chile, seeded and finely chopped
3 tablespoons fresh lime juice, or to taste
1 tablespoon honey
1 tablespoon olive oil
Fresh ground pepper and sea salt to taste

Directions:

In a medium bowl, make the dressing by mixing 3  tablespoons  lime juice, honey, oil and jalapeno. Season with salt and pepper, to taste. Add the pineapple and onion. Gently fold in the avocado and cilantro. Let the flavors blend for at least 15 minutes before serving.
Them gently toss together all ingredients with salt and pepper to taste.
