                                        Beef Fajitas

Once again I have to continue to use up what I have in the refrigerator and freezer before I move.
This time I took four thin sandwich steaks out of the freezer and I knew I had to use of the fajitas I had left over. No problem lets make Beef Fajitas.
I found a someone what easy recipe that should be a great for this dinner.
Here is what I found a recipe that inspired me was one by the 
Pioneer Woman on the Food Network: Of course I had to change a few things to make it affordable without compromising the taste.
This is what I did:


Beef Fajitas

Ingredients

  • a couple pieces of thin steak
  • 1Olive Oil
  • 1 Tablespoon Worcestershire Sauce
  • 1/3 cup Lime Juice, Fresh Squeezed (use lemon or lime juice if you don't have fresh on hand)
  • 1 clove or teaspoon of garlic
  • 2 tablespoons of taco seasoning 
  •  sea salt and black pepper to taste
  • 1/2 Tablespoon Sugar
  • 1 Medium Onions
  • Then chop up peppers to equal a half a cup. I use banana and bell I like the different colors use the ones you like
  •  2 Flour Tortillas, Warmed
  •  Cheese (grated Cheddar/jack Or Crumbled Queso Fresco)
  •  Salsa
  •  Sour Cream
  •  Cilantro Leaves

 Instructions:

In a dish, mix together olive oil, Worcestershire, lime juice, garlic, taco seasoning, salt, pepper, and sugar until combined.
 Pour half of the marinade into a separate dish. In one dish, place the  steak, turning it over to coat.
 In the second dish, place all the veggies, turning to coat. 
Cover the dishes with plastic wrap and place in the fridge for at least 2 hours.
Prepare tortillas, salsa, sour cream, and cilantro.(  use the topping you like for me its sour cream)
Heat a  skillet over medium-high heat and drizzle in some oil. 
Add the veggies and cook them for a few minutes, until they're cooked but still slightly firm and have nice black/brown pieces. Remove to a plate and set aside.
Heat the same same skillet over high heat and drizzle some oil. 
Cook the meat for about 2 minutes per side until medium rare. 
Remove and allow to rest on a cutting board for 5 minutes.

 Serve with all the fixins.
